Enjoy Today

I've had such an up and down week. Up because I felt like I was making some good progress on cleaning house, reading a book, stitching and sewing. Down because my Beauty project isn't going as smoothly as I would like.  So I've stepped away from it for the next few days.  Need to just take a deep breath.

I started to work on a project that I tried to teach and encourage Newton to do.  He started it a year ago and didn't get very far because he thought it was too hard.


I managed to get 10 rows done between chores and evening on Friday.  It's rug size, but I can't bear the thought of so much work on the floor, so I'm thinking a large pillow when it's time to finish it.

I decided to take the day off today.  I've made a chore list for Newton, and he's plowing right through it.  Nothing major and he's even managed to find some time to play in the kitchen with me.

After breakfast dishes were done, I started working up my weekend menu.  Yesterday I put on a crock of Goulash. We haven't had it for some time, and it's a really good autumn meal.  We'll have it with smashed potatoes and green beans.  Yum !!

I also made Apple Oat Muffins with Cranberries and Almonds.  The recipe called for pecans, but I had almonds, so I used them.  You can find the recipe here.



So back to this morning.  I still have a few zucchini left.  They are mostly done in the garden. Every time I leave them to get a little larger, something is coming by and enjoying the fruits of my labor.



So I took one of the ones that survived the neighborhood critters and made zucchini pie. This is one of Honey Do's absolute favorite meals.  And it's been awhile since I made it. The recipe is in the Betty Crocker book.  I find that it takes a lot longer to bake than the book says, but that could just be my oven.  Although, zucchini has a lot of moisture in it and I'm working from a hand-written copy from my late mother-in-law.  May be that I'm missing a step or two and just don't realize it because I've never looked it up. Regardless, today's attempt is absolutely gorgeous, if I may say so myself.



My next attempt is Sausage and Cheese Muffins.  That recipe can be found here. I grocery shop at a discount store, so they don't always have what a full grocery will have. In this case, it was the nacho cheese soup.  So I substituted con queso.  It worked :) Aren't they pretty?

Honey Do is relaxing, Newton is finishing up his last chores, I'm trying to decide if I want to stitch or read a book.  It's almost 1 p.m. EST.  It's been a very productive morning.  A gorgeous October day, low 70s, light breeze and lots of sunshine.  A perfect day in my opinion - not that anyone asked :)

Cooking is good for what ails us. =) The zucchini pie looks great. I used to have one that was pineapple zucchini, and it was yummy, but I don't know what happened to the recipe. Love my Betty Crocker cookbook. I'm on the third one, and need another one soon, as it's falling apart, too.

I agree whole-heartedly. I've decided that for now, I have enough other projects to work on and will come back to this one. I'm finally ok with that.

Comfort food for comforting. When all else fails, cook something. I'll have to see if I can't find your recipe. It sounds yummy.
